Influence of ohmic heating in the composition of extracts from Gracilaria vermiculophylla

Electric field-based technologies for extraction processes have been gaining importance due to sustainability concerns. This work aims assess the potential of ohmic heating as an efficient and feasible tool different biocompounds from Gracilaria vermiculophylla its effect on extracts' composition. Different ratios water/ethanol (0 75% ethanol, v/v) were used target families biocompounds. The heating-based was performed at 82 °C under electric field frequency 2–8 V/cm 25 kHz, respectively. Conventional extractions without presence made keeping a temperature profile identical treatments, thus addressing occurrence electrical (non-thermal) effects. Extraction yields extracts composition (content in polysaccharides, proteins, phenolic compounds pigments) evaluated.
